Spelt Puffs with basil-flavored cheese

50g butter
1 1/4 cups Kialla Pure Foods Spelt Flour
4 eggs
150g farmers cheese
1/4 cup whipped cream
Basil leaves
Juice from half pressed garlic clove
1 teaspoon coarse salt
1-2 teaspoon lemon juice

method
Bring 250ml of salted water to the boil with the butter. Tip in spelt flour and stir vigorously until the batter has thickened and is pulling away from the sides and bottom of pan. Remove the saucepan from the stove. Slowly stir in eggs. The dough should adhere quite firmly to the mixing spoon. Cover a baking tray with parchment paper. With an icing bag, pipe small ball of soft dough onto the parchment paper. Preheat the oven to 190°C and bake for about 20 minutes, making sure not to open the oven door whilst baking. Then mix the farmers’ cheese and the cream together. Chop the basil finely and add to the cheese and cream, then add the garlic juice; season to taste with coarse salt and lemon juice. Leave the pastry puffs to cool. Slit each one open, taking care to put to one side of any dough that is removed. Fill them with the cheese mixture and replace any dough that has been removed once they are full.
