Light Banana Cake

1 ¼ cups of Kialla Pure Foods Unbleached Self-Raising Flour
1 teaspoon ground cinnamon
2 tablespoons low-fat spread
½ cup of caster sugar
1 organic egg beaten
¼ cup of organic skim milk
1 cup of mashed bananas
method
Preheat moderate oven . Sift flour and cinnamon together into a large bowl. Rub in spread with fingertips until it resembles fine breadcrumbs. Lightly stir in sugar, egg, milk and mashed banana. Spoon into prepared tin and bake for 25 minutes until it is golden and springs back when lightly touched.
