1/2 cup Kialla Pure Foods Maize Flour (Yellow Corn Flour)
1 cup Kialla Pure Foods Unbleached Plain Flour
7g dry yeast
1/2 cup warm water (about 60ºC)
1 cup light cream (1/2 cream/ 1/2 milk)
3 large eggs, separated
1 teaspoon sugar
Sour cream or creme fraiche
Chopped capers or caviar or fine strips of smoked salmon.
Sprinkle the yeast over the warm water in a small bowl and let stand for 5 minutes. Pour the yeast mixture into a blender and add the cream, cornflour, plain flour, egg yolks, sugar and melted butter; blend, until smooth; pour into a large bowl, cover, and let rise in a warm, draft free place until doubled in bulk. Beat the egg whites in a mixing bowl until soft peaks form. Gently fold the whites into the batter until just combined. Heat a pan over medium–high heat and brush lightly with butter; drop the batter onto the pan to make little pancakes or blinis about 1 1/2 inches in diameter.
