Almond Loaf

1 cup Kialla Pure Foods Rice Flour
3 egg whites
Pinch cream of tartar
1/4 - 1/2 cup honey
Almond essence
1/2 cup blanched almonds

method
Beat egg whites with cream of tartar. Gradually beat in honey and almond essence (few drops) until the moisture is of meringue consistency, forming soft peaks. Fold in sifted flour and almonds. Spoon into a lightly greased loaf tin. Bake at 180°C for 30-40 minutes. Leave in tin until completely cold. Slice the bread thinly with a very sharp knife. Place on tray and bake in moderately slow oven until lightly browned.
