Banana, date and rolled oat cookies

You need one medium overripe banana (230g) for this recipe.
125g butter, softened
1 teaspoon finely grated lemon rind
1 cup (220g) firmly packed brown sugar
1 egg yolk
1/3 cup mashed banana
11/2 cups (225g) Kialla White unbleached plain flour
½ teaspoon bicarbonate of soda
1 cup (90g) Kialla rolled oats
½ cup (75g) finely chopped dried dates
2/3 cup (60g) Kialla rolled oats, extra
4 dried dates (35g), seeded, chopped coarsely
Preheat oven to 180°C/160°C fan-forced.
Grease oven trays; line with baking paper
Beat butter, rind, sugar and egg yolk in small bowl with electric mixer until combined; stir in banana then sifted flour and soda, oats and dates.
Roll level tablespoons of mixture into balls; roll each ball in extra oats then place on trays 5cm apart.
Press a piece of coarsely chopped date into centre of each ball.
Bake about 15 minutes.
Cool cookies on trays.
